Tasty Tuesday: Filet Mignon with Herb-Butter Sauce and Mushrooms

Valentine's Day is this Sunday. There's nothing that says "I love you" like Filet Mignon! You and your Valentine can fall in love over #BEEF with this #TastyTuesday recipe for Filet Mignon with Herb-Butter Sauce and Mushrooms! Everyone loves tenderloin, so share it with the one you love! Not to mention a home-cooked meal...how romantic! Be sure to half the recipe for a meal for two!

Filet Mignon with Herb-Butter Sauce and Mushrooms

Total Recipe Time: 30 to 35 minutes
Makes 4 servings

Ingredients:

  • 4 beef Tenderloin Steaks, cut 1 inch thick (about 6 ounces each)
  • 1 tablespoon butter
  • 1-1/2 cups assorted mushrooms (shiitake, enoki, straw, cremini, button or chanterelle), whole or cut in half if large
  • 1/4 cup minced shallots
  • 1-1/2 cups beef broth
  • 1/2 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Heat large nonstick skillet over medium heat until hot. Place beef steaks in skillet; cook 10 to 13 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Remove to platter, season with salt and pepper, as desired. Keep warm.
  2. Heat butter in same skillet over medium heat until melted. Add mushrooms and shallots; cook and stir 3 to 5 minutes or until mushrooms are tender and browned. Add beef broth and thyme to skillet, stirring until browned bits attached to bottom of pan are dissolved; bring to a boil. Combine cornstarch and water in small bowl; stir into mushroom mixture. Cook 2 minutes or until sauce thickens, stirring occasionally. Season with salt and pepper, as desired.
  3. Serve steaks with sauce.

Ribeye Steaks with Sauteed Grape Tomatoes and Brie


Total Recipe Time: 25 to 30 minutes
Makes 2 to 4 servings

Ingredients

  • 2 beef Ribeye Steaks Boneless, cut 1-inch thick (about 12 ounces each)
  • 2 cups grape tomato halves (about 10 ounces)
  • 3 tablespoons water
  • 3 teaspoons minced prepared roasted garlic, divided
  • 4 ounces Brie cheese, shredded
  • 2 tablespoons thinly sliced fresh basil
  • Fresh basil (optional)

Instructions

  1. Combine tomatoes, water and 1 teaspoon garlic in large nonstick skillet. Cook, covered, over medium heat 4 to 5 minutes or until tomatoes are tender, stirring often. Season with salt and pepper, as desired. Remove from skillet; keep warm. Carefully wipe out skillet with paper towels.
  2. Press remaining 2 teaspoons garlic evenly onto beef steaks. Place steaks in skillet over medium heat; cook 12 to 15 minutes for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
  3. Carve steaks into slices; season with salt and pepper, as desired. Add cheese and basil to tomatoes; stir until well combined. Serve immediately with beef. Garnish with additional basil, if desired.

Tasty Tuesday: Lean Beef Fajitas

We think this #TastyTuesday should be a #TacoTuesday kind of
meal! It’s easy to serve healthy, flavorful fajitas when lean beef is the centerpiece! Flank steak is perfect for fajitas because it’s a great cut to marinate before grilling, and it is best served sliced thinly. Quick Beef Fajitas with Pico De Gallo

25 minutes
4 servings

Ingredients

  • 1 beef Flank Steak (about 1-1/2 pounds)
  • 8 medium flour tortillas, warmed
Marinade:
  • 2 tablespoons fresh lime juice
  • 2 teaspoons vegetable oil
  • 2 cloves garlic, minced
Pico de Gallo:
  • 1/2 cup chopped seeded tomato
  • 1/2 cup diced zucchini
  • 1/4 chopped fresh cilantro
  • 1/4 cup prepared picante sauce or salsa
  • 1 tablespoon fresh lime juice


Instructions

  1. Combine marinade ingredients in small bowl. Place beef steak and marinade in food-safe plastic bag; turn to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
  2. Combine Pico de Gallo ingredients in medium bowl.
  3. Remove steak; discard marinade. Place steak on grid over medium, ash-covered coals. Grill, covered, 11 to 16 minutes (over medium heat on preheated gas grill, 16 to 21 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Carve across the grain into thin slices. Serve in tortillas with Pico de Gallo.

Tasty Tuesday: Mediterranean Beef Pitas with Yogurt-Cucumber Sauce

Mediterranean Beef Pitas with Yogurt-Cucumber Sauce

Makes 6 servings

Ingredients

  • 1-1/2 pounds Top Round Steak, cut 1 inch thick
  • 1-1/2 cups nonfat plain Greek or regular yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon minced garlic
  • 1 medium cucumber
  • Salt and pepper
  • 6 white or whole wheat pita breads
  • 3/4 cup plain or seasoned hummus
  • 10 cherry tomatoes, quartered or 1 cup grape tomatoes, halved
  • 1/3 cup halved Kalamata olives
  • 3 tablespoons crumbled feta cheese

Instructions

  1. Combine yogurt, lemon juice and garlic in medium bowl. Place beef steak and 3/4 cup yogurt mixture in food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight.
  2. Meanwhile, cut cucumber in half lengthwise; cut one half crosswise into 1/4-inch slices and reserve. Chop remaining cucumber half into 1/4-inch pieces. Add chopped cucumber to remaining yogurt mixture; season with salt, as desired. Cover and refrigerate.
  3. Remove steaks from marinade; discard marinade. Place steak on rack of broiler pan so surface of beef is 2 to 3 inches from heat. Broil 13 to 18 minutes for medium rare (145°F) doneness, turning once. (Do not overcook.) Carve steak into thin slices. Season with salt and pepper, as desired.
  4. Spread pitas with hummus. Evenly top with sliced cucumbers, tomatoes and steak slices. Sprinkle with olives and feta cheese. Serve with reserved yogurt mixture.

Tasty Tuesday: Top Sirloin Petite Roast & Parmesan Roasted Tomatoes

TOP SIRLOIN PETITE ROAST WITH PARMESAN ROASTED TOMATOES

Total Recipe Time: 1.5-2 hours
Makes 6-8 servings

Ingredients

  • 1 beef Top Sirloin Petite Roast (1-1/2 to 2 pounds)
  • 1 cup lightly packed fresh parsley leaves
  • 2 cloves garlic
  • 1 teaspoon pepper
  • 2 tablespoons olive oil, divided
  • 8 plum (roma) , cut in half lengthwise, seeded
  • 2 tablespoons shredded Parmesan cheese

Instructions

  1. Preheat oven to 325°F. Place parsley, garlic, pepper and 1 tablespoon olive oil in food processor or blender container. Cover; process until just blended. Rub mixture evenly over all surfaces of roast. Place roast, fat-side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef. Do not add water or cover. Roast in 325°F oven 60 to 75 minutes for medium rare to medium doneness.
  2. Toss tomatoes with remaining 1 tablespoon olive oil in large bowl. Arrange tomatoes, cut sides up, on metal baking sheet. Roast in 325°F oven for 1 hour or until skins are wrinkled and begin to brown.   
  3. Remove roast when meat thermometer registers 135°F for medium rare; 150°F for medium. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 10 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare; 160°F for medium.) Meanwhile, increase oven temp to 425°F. Sprinkle tomatoes with Parmesan cheese. Continue roasting an additional 8 to 10 minutes or until cheese is melted and tomatoes are lightly browned. Season with salt and pepper, as desired.
  4. Carve roast into slices; season with salt and pepper, as desired. Serve with tomatoes.

Tasty Tuesday: Slow Cooker Pot Roast Soup

While cooler temperatures haven't hit Alabama too hard so far this fall, they're coming! Hunker down for cooler temps with this #TastyTuesday recipe for Slow Cooker Pot Roast Soup. Combine two classic fall season meals, pot roast and beef stew, for a dinner your family can be thankful for together! Slow Cooker Pot Roast Soup

HIGH 5-6 Hours, LOW 8-9 Hours
Makes 6 Servings

Ingredients

  • 1 beef Shoulder Roast Boneless (2-1/2 pounds)
  • 2 cups chopped onions
  • 1 can (14-1/2 ounces) diced tomatoes with green peppers and onions, undrained
  • 1 cup frozen hash brown potatoes (cubes)
  • 1 cup beef broth
  • 1 tablespoon minced garlic
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups broccoli slaw
  • 1/2 cup frozen peas

Instructions

  1. Cut beef roast into 12 equal pieces. Place in 4-1/2 to 5-1/2-quart slow cooker. Add onions, tomatoes, potatoes, broth, garlic, thyme, salt and pepper. Cover and cook on HIGH 5 to 6 hours or on LOW 8 to 9 hours or until beef is fork-tender. (No stirring is necessary during cooking.)
  2. Stir in broccoli slaw; continue cooking, covered, 30 minutes or until broccoli slaw is crisp-tender. Turn off slow cooker. Stir in peas; let stand, covered, 5 minutes.

Tasty Tuesday: Autumn Pot Roast

Pot roast- a warm, nostalgic dinner that's as easy to prepare as it is to eat! A good pot roast is simply good for the soul. With the onset of Fall in the past week, we thought this Autumn Pot Roast with Root Veggies recipe would make for the perfect #TastyTuesday. Grab the recipe here or at Beef It's What's For Dinner. 

Autumn Pot Roast with Root Vegetables

Total Recipe Time: 3.5 hours
Makes 6-8 servings

Ingredients

  • 1 beef Shoulder Roast, Arm Chuck Roast Boneless or Blade Chuck Roast Boneless (3 to 3-1/2 pounds)
  • 1 tablespoon vegetable oil
  • 8 small red-skinned potatoes, halved
  • 2 large carrots, cut into 2-1/2 x 1/2-inch pieces
  • 2 large parsnips, cut into 2-1/2 x 1/2-inch pieces
  • 1 small leek, cut into 1-1/2 inch pieces
  • 1-1/2 tablespoons cornstarch dissolved in 3 tablespoons water
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1/2 teaspoon each salt and lemon pepper

Instructions

  1. Combine seasoning ingredients; press onto beef pot roast. Heat oil in stock pot over medium heat until hot. Brown pot roast. Pour off drippings.
  2. Add 3/4 cup water; bring to a boil. Reduce heat; cover tightly and simmer 2 hours. Add vegetables; continue cooking, covered, 30 to 45 minutes or until pot roast and vegetables are fork-tender. Remove pot roast and vegetables; keep warm.
  3. Skim fat from cooking liquid. Measure and return 2 cups cooking liquid to stock pot. Stir in cornstarch mixture; cook and stir 1 minute or until thickened and bubbly. Carve pot roast. Serve with vegetables and sauce.

Tasty Tuesday: Back-To-School Cheeseburger Mac

Oh yes! It's that time again...time for the kids to hit the hallways and homework! Now that their schedules are picking up with sports, clubs and other extracurricular activities, that means yours is too! Don't get so bogged down in planning and cooking dinner that you can't enjoy helping your kiddos get ahead in the classroom. Instead, serve up beef in a way that they're sure to love and is easy on you!

This kid-friendly meal is packed with nutrition disguised in a flavor they'll love! What kid doesn't love macaroni and cheese? And by adding beef, your adding protein, B-vitamins, iron, choline, selenium, zinc, phosphorous, niacin and riboflavin (to name a few!) to their diets to help them have healthy minds and bodies! 

So if you're into have healthy kids who do well in the classroom as well as having time to take care of yourself, serve up this great recipe for cheeseburger mac! It's #Tasty. It's packed with #Nutrients. It's #Beef.

INGREDIENTS

1 pound Ground Beef
1-1/2 cups water
1 package (7-1/4 ounces) macaroni and cheese dinner
4 tablespoons butter
1/2 cup milk
8 to 10 dill pickle slices (optional)


INSTRUCTIONS 

1. Heat large nonstick skillet over medium heat until hot. Add       Ground Beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Pour off drippings.
2. Stir in water and macaroni; bring to a boil. Reduce heat; cover and simmer 7 to 8 minutes or until macaroni is tender.
3.Stir in contents of cheese sauce packet, butter and milk. Cook 1 to 2 minutes or until heated through, stirring occasionally.
4. Serve beef mixture topped with pickle slices, if desired.
